We are incredibly lucky to live and work amongst some of the finest countryside anywhere. The green and fertile land provides us with the most wonderful ingredients. As head chef, I have an active policy of trying to source ingredients locally. Only if it is not grown, nor made in the locality, will I then go elsewhere. I estimate that over 80% of the food we prepare comes from the British Isles, and the majority of that is from Wales and the Borders. None of the food we cook is genetically modified. Our 1 AA Rosette restaurant has a dress code, which is smart casual with no jeans/trainers. Alternatively we have a Tavern Bar/Restaurant for a more informal experience.
